If your kids are like mine, they love sweets. I recently discovered Trader Joe’s Sweet Chili sauce for $1.29. (Note: most Asian markets should have a similar product). It has given a new dimension to stir fry.
1 pound of lean meat diced into small cubes. You can use chicken breast, turkey breast, or steak (if it’s lean.)
1 pound of vegetables, cut, sliced, or shredded. Use carrots, broccoli, peppers, etc..
1 large onion sliced or diced, and separated from the other vegetables. Use yellow or white onion.
2 diced Jalapeno peppers.
Sweet Chili Sauce
Place the onion in your Wok along with 4 tablespoons of olive oil. Continue to stir the onions so they cook evenly and turn a golden brown color. You may need to cover your wok to increase the heat to cook the onions.
Once the onions are brown, add your meat to the wok along with 1 teaspoon of salt. If the meat starts to stick, add a little olive oil, but if you are using a non-stick wok this should not occur. Continue to stir the meat until every piece looks cooked and the edges have turned brown, but not black.
To make your dish spicy, this is where you would add the diced Jalapeno peppers. For medium hot, use 2 peppers for every pound of meat. For mild use 1 pepper for every pound and for spicy, use 3 or 4 per pound.
Now you are ready to add your vegetables. Layer them on top of the meat and add 2-3 ounces of the Sweet Chili Sauce. Cover your wok and lower heat to medium. This will create a steaming effect to cook the vegetables.
Wait a few minutes and stir the vegetables in with the meat. You will want to add half a cup of water at this point to make more sauce. You may also want to add more sweet chili sauce.
Give it a quick taste and if everything looks good, turn the heat off, leave covered wok on stove for a few minutes, and serve with rice or noodles.
Entire dish should only cost about $10.00 – $12.00 depending on where you shop and the type of meat you buy. This should feed a family of six.
