Red Quinoa Salad – healthy, tasty and easy to make.

The other day I was at my local health foods store where I purchased a small container of Red Quinoa Salad for $4.00. I was shocked by how much it cost so I decided to make it myself and see how much it costs. I also wanted to see if I could make a better salad.

INGREDIENTS:

  • Red Quinoa
  • 1 chopped red onion
  • 1/2 lb sliced mushrooms
  • 1 large bowl of chopped kale
  • 3 diced persian cucumbers
  • 1/2 cup sliced Kalamata olives
  • 1 diced red pepper
  • (optional) 1 diced tomato

STEP 1: Prepare 1 – 1.5 cups of Red Quinoa as instructed on box
STEP 2: Saute red onion, mushrooms and kale in olive oil and salt at medium heat
STEP 3: In a large mixing bowl, mix the sautéed vegetables, quinoa and chopped vegetables (olives, cucumbers, red pepper and optional tomato)
STEP 4: Add 1/8 – 1/4 cup fresh squeezed lemon or lime juice, 2-3 tablespoons of olive oil, salt and pepper.

If salad appears dry, add more olive oil and lemon juice. You may also add some balsamic vinegar.
Total Cost: $8.00. Serves 8-10 people.

Results: four different people have tried it and all have asked me for the recipe. That’s a good sign. Hope you like it as well. Eating healthy is expensive when you’re on the road, but at home it takes less time to make it than it does to drive and stand in line, plus you save a lot of money. Cheers!
